Hammy’s Egg Sammy

 

 

 

 

A simple sandwich that my mom would trust me around the stove with when I was in my early teens. A bit of a misnomer since it doesn’t have ham (it’s a consistent request of my middle child Cam, whom I call Hammy)—this is the perfect wake-up any day of the week. But especially after a night of the aforementioned chili and Red Eye. 

Which wasn’t my reason for making them when I was in my early teens.

Ingredients:

  • 2 fresh, jumbo-sized eggs
  • 4 slices of Applegate - Natural Good Morning Bacon
  • 2 kaiser sandwich rolls
  • 6 thin slices of Yancey's Fancy sharp cheddar cheese
  • Hellman’s Mayonnaise

Directions:

Fry eggs over-medium. It’s ok to make them a little on the well-done side to stiffen up the yolk. Cook bacon. Medium well. Toast rolls, lay 3 pieces of cheese on one slice, add mayo to the other. Place bacon on cheese. Eggs on bacon. Maybe some pepper. Tops on each.

Grab a strong cup of coffee. Maybe some orange juice as well. If you’re feeling adventurous, grab a banana or some strawberries and blueberries.

Try not to bite your own fingers while scarfing them down.
